Make Low-Wattage Short Rib Chili

With a pressure cooker and some simple ingredients, you can make an energy-efficient meal.

Short Rib Chili

  • Total time: 1 hour 20 minutes

Ingredients

  • 1 lb. short rib

For rub:

  • 2 tbsp olive
  • Pinch of salt
  • Pinch of pepper
  • 1 tsp of chili powder

For braise:

  • 1 clove garlic, minced
  • 1 cup of beef broth

For chili:

  • 1/2 cup onions, diced
  • 1 14-oz. can of tomatoes
  • 1 14-oz. can of chili beans
  • 1 tbsp of chili powder
  • 1 tsp of cilantro
  • 1/12 tbsp of brown sugar

Directions

1. Add oil and rub with spices on all sides.

2. Sear short rib for 1 minute on each side.

3. Add garlic and broth. Pressure-cook on high for 30 minutes.

4. Remove short rib and let rest. Add the rest of the ingredients to the pot.

5. Shred short rib and add back into the pot.

6. Cover and cook on low for 30 minutes. Remove top and cook for an additional 10 minutes.

7. Scoop chili into bowls and add toppings.
